This robust variety of sage (Salvia fruticosa) is found everywhere across the Aegean Sea islands. One of its main differences from common European sage is a more intense taste and fragrance. Interestingly enough, it tends to smell stronger when it grows in arid soils.

Daphnis & Chloe's selection comes from an organic farm in Crete, where all herbs are processed by hand. 

Sage brings a balance to poultry, game, pork roasts, or herbed butter. This variety makes a mark even when used in tiny quantities. Add leaves in cooking and discard before serving. Alternatively, grind along with coarse salt and black pepper to sprinkle over butter and anchovy bruschetta.

The infusion of sage has been one of Greece’s most popular herbal teas for centuries. In Crete, it is a popular belief that the locals owe their longevity to the herb! 

To make Sage tea, you’ll need a teaspoon (0.5g) per teacup, dosage on taste. Simmer for 5mins 95C, covered. Strain and serve alone or with honey. Folklore herbal medicine suggests lemon and honey infused sage as an excellent remedy for the flu.

Daphnis and Chloe was established in 2013, in a small workshop right under the Acropolis Hill of Athens. The team's dream was to see the limited batch terroir herbs of Greece in the kitchens of home cooks worldwide. 

Daphnis and Chloe come from a small country with a peculiar geographical distribution and variable micro-climates where Mediterranean herbs thrive. Studied by scientists and traded by farmers since the beginning of history, these little known ingredients have great culinary value. However, they rarely cross the borders of their places of origin. 

The D&C team's job has become to travel the country for superior herbs and inspire farmers to believe in forgotten, heirloom varieties. They source from small organic farms across Greece, and they know their growers by their first name. Curating their plants’ journey from sourcing to shipping, the team makes sure they’ll maintain their magical properties all the way to your kitchen!
